Cooking Up A Storm

(Wait...did those words really just come out of my mouth {mind}?)

We have been in dire need of groceries for the past week - to the point where we broke down and actually fed little man Runza chicken fingers one night after visiting the Street of Dreams after work (he loved them BTW, but then again who wouldn't?).
We loaded up with $300+ worth of groceries at Hy-Vee and after a massive unload and cleaning out the fridge and pantry, I started my cooking adventure. Cutting up tons of veggies so we would have them on hand for salads and snacking, fresh pineapple & grapes, boiling eggs for my breakfast each morning, whipping up some lettuce wraps (ala PF Chang's), throwing together some homemade meatballs for later this week (little man finally gets to try them!) and trying out a new Pinterest recipe for string cheese cheeseballs (delish!)

Three and a half hours later, I had an extrememly messy kitchen, a very tired boy, meals planned for the rest of the week and a delicious dinner!

The ingenius way I opened a can of water chesnuts with no can opener -
striking it over and over w/ my favorite corkscrew!

It's amazing how much he loved those bowls and spoons!
